I have had a couple of triptychs framed but they had already had their margins trimmed, so it was no big deal to have the image continuous. With the margins still intact, I wouldn't dream of trimming or folding them.
The idea of having a small strip of mat to cover the margins really is a pretty good one, IMO. It really does not detract from the image, at least to my admittedly unsophisticated eye. I've also seen Triptychs framed in three seperate frames and, when hung together, still look great.
Obviously you'll want to be sure to have a reputable framer do the work and use archival grade materials and U.V. glass (I like the non-glare stuff).
The triptychs I've seen never seem to line up that well anyway and some type of border between the panels can actually enhance the look, again IMHO.
